Why do I need to have a grease trap?
Your grease trap has been designed to filter or "trap" grease or food waste in order to prevent it from flowing into the main line where it could create a "clog". Most townships or municipalities periodically test the grease content of their waste stream. If high levels are indicated, they attempt to locate the generator of the grease. Fines or surcharges can be levied on the suspected generator, therefore, regular maintenance is important.

Why do I need regular maintenance on my grease trap?
Regular maintenance is essential for peak performance. Each system is unique in its requirements ranging from frequency of pumping to high pressure jet cleaning. Grease can accumulate differently depending upon the type of food served and if the screens, filters, or baskets are used properly in the kitchen areas. Many clog situations will occur if baskets are removed during clean up and debris is flushed down the drain. Your grease trap could require regular cleaning from one time weekly, monthly, quarterly, semi-annually, or annually. We can determine your schedule after a review of 30 days.

How is my grease trap cleaned?
Pumping of solids that accumulate inside your trap is performed by two different methods. Smaller grease traps only require a shop vac whereas larger grease traps require one of our vacuum trucks to perform this service due to the high volume of waste. Once you are placed on a regular maintenance jetting schedule, we utilize our 4,000 p.s.i. high pressure jet machine to clean the walls of the tank and clean the baffles. This schedule is tailored according to your restaurant's needs. Our jet contains special grease nozzles to scour the lines and tanks while simultaneously pumping all waste knocked loose by the cleaning process. The combination service of a pump truck and jet is the best option to safeguard against backups caused by your grease system.

I am using an enzyme program. Is it true that the tank will never need emptying again?
Enzymes perform the best when there is a constant or fixed waste stream present and your grease content is of a consistent nature. Most enzymes cause the grease to emulsify in order to allow it to flow properly to the main sewer line. However, the grease molecules remain in a "suspension" state and can become tacky or like "peanut butter" further down the line causing problems. Although enzymes aid in keeping your trap clean, regular pumping and preventative maintenance are the key to the best performance. Keep it simple. Clean the system frequently in conjunction with enzymes for piece of mind.

How can my staff help eliminate back ups in my restaurant?
There are several tips that can help eliminate back ups. Make sure that all your sink baskets and strainers are in place. Bolt them down if you must. Resist the temptation to remove sink screens or drain baskets. Make sure that all floor drain covers are secured tightly and cannot be easily removed. Also make sure you have a secure screen cover on the mop sink drain. Consider an alternative to paper towels for public restrooms. Paper towels in the drain line will cause problems with a perfectly plumbed pipe. Schedule high pressure jetting of inside and outside lines at least annually or semi-annually. Preventative maintenance on a rotating schedule with cable service is common for high volume restaurants.
